Semi Anaerobic Oolong

A red oolong with dried fruit character at its core and a restrained anaerobic ferment.

After rolling, the leaves are sealed and placed in a tank for eight days with minimal oxygen exposure. This controlled fermentation does not amplify intensity; instead, it refines texture and complexity. The result is layered yet quiet - broad in spectrum, but delicate in expression.

Dried fruit tones remain central, supported by soft ripeness, gentle florals and a light, balanced acidity. A subtle anaerobic nuance appears in the background, integrated and understated.

Oxidized at 25-35%, the tea feels composed and gentle, with a rounded structure and a calm, lingering finish.

Brewing Tip

Filtered water at 90-92°C, 3-4 grams of tea per 300 ml of water, steep for 2-3 minutes.

Processing Method

Classical withering. Oolong drum tumbling for 10 minutes, followed by a 30-minute resting period. Rolled for 30 minutes without pressure and then for 10 minutes under light pressure. Immediately after rolling, the leaves are sealed in food-grade plastic with minimal oxygen exposure, wrapped in cloth, and left to ferment for 8 days. After fermentation, the tea undergoes 1 hour of oxidation. Finished with drying for 20 minutes at 130°C in a chain dryer.
