Morning Dew White Tea

A classic white tea: sun-dried on bamboo trays in the morning sun for 70 hours. Minimal intervention and our most challenging tea.

This is one of the most difficult teas we’ve made in many years. The challenge is catching three sunny mornings in a row and drying the tea over three days. If it dries in two days, the sweetness and complexity won’t develop; if it takes four, the tea loses sweetness and shifts into vegetal and woody notes.

The result is a white tea of remarkable depth - floral yet grounded, honeyed yet mineral, with a smooth, almost weightless texture. No oxidation, no mechanical intervention - only altitude, sun, and careful timing.

Brewing Tip

Filtered water at 80-85°C, 3-4 grams of tea per 300 ml of water, steep for 2-3 minutes.

Processing Method

Hand-picked and withered for 6 hours without airflow, followed by 3 hours with gentle ventilation. The leaves are then spread on bamboo trays and sun-dried from 6:00 to 10:00 a.m., after which they are rested indoors on mesh racks. This process is repeated over three days. The most challenging part is reacting instantly to any passing clouds, ensuring the tea - while drying outdoors - never encounters humidity or rain.
